  • 1/2 cup honey or maple syrup
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a bowl, mix together pumpkin puree, honey, vegetable oil, eggs, and vanilla extract.
  3. In another bowl, combine whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
  5. Fill each muffin cup about 2/3 full with the batter.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  7. Let the muffins cool in the tin for 5 minutes before transferring to a wire rack.

Notes

  • For added texture, consider adding nuts or chocolate chips to the batter.
  • These muffins can also be made gluten-free by substituting with almond or coconut flour.
