  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup turkey bacon, cooked and crumbled
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Place the diced potatoes, chopped onion, and minced garlic in the crockpot.
  2. Add the chicken broth and stir to combine.
  3. Cook on low for 6-8 hours or until the potatoes are tender.
  4. After cooking, use a potato masher to mash some of the potatoes for a creamy texture.
  5. Stir in the heavy cream, crumbled turkey bacon, salt, and pepper.
  6. Cook for an additional 30 minutes on low.
  7. Garnish with fresh parsley before serving.
