  • 1 cup shredded cheddar cheese
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup milk
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble.
  2. Sauté the onion and garlic in the bacon drippings until translucent.
  3. Add the diced potatoes and chicken broth, bringing the mixture to a boil.
  4. Reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  5. Stir in the milk, cheddar cheese, thyme, pepper, and salt. Cook until cheese is melted.
  6. Top with crumbled turkey bacon before serving.
