High Protein Broccoli Cheddar Soup

A delicious and nutritious soup packed with protein and flavor, featuring broccoli, cheddar cheese, and savory turkey bacon.

  • 2 cups chopped broccoli
  • 1 cup shredded cheddar cheese
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup milk
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble. Reserve drippings.
  2. Add diced onion and garlic to the pot, cooking until translucent.
  3. Stir in flour and cook for 1 minute.
  4. Gradually add chicken broth and milk, stirring until smooth.
  5. Add broccoli, salt, and pepper, and simmer until broccoli is tender.
  6. Stir in cheddar cheese until melted.
  7. Top with crumbled turkey bacon before serving.

Notes

  • For a thicker soup, add more flour.
  • Can substitute turkey bacon with regular bacon if preferred.
