- 4 slices turkey bacon
- 1 cup diced onion
- 2 cloves garlic, minced
- 1 cup diced carrots
- 1 cup diced celery
- 6 cups chicken broth
- 1 can (15 oz) diced tomatoes
- 1 cup diced potatoes
- 1 cup green beans, trimmed and cut
- 1 can (15 oz) cannellini beans, drained and rinsed
- 2 cups chopped kale
- 2 teaspoons dried thyme
- Salt to taste
- Pepper to taste
- In a large pot, cook the turkey bacon until crispy. Remove and set aside.
- In the same pot, add the onion, garlic, carrots, and celery. Sauté until softened.
- Add the chicken broth, diced tomatoes, and potatoes. Bring to a simmer.
- Add the green beans and cook until tender.
- Stir in the cannellini beans, kale, thyme, salt, and pepper.
- Crumble the turkey bacon and add it back to the pot. Cook for additional 5 minutes.
- Serve hot.

- This minestrone is versatile; feel free to add any seasonal vegetables.
- Leftover turkey or chicken can be used for added flavor.
