Ina Garten’s Winter Minestrone

A hearty and delicious winter minestrone that combines turkey bacon and chicken ham for a comforting dish.

Ingredients

  • 4 slices turkey bacon
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 cup diced carrots
  • 1 cup diced celery
  • 6 cups chicken broth
  • 1 can (15 oz) diced tomatoes
  • 1 cup diced potatoes
  • 1 cup green beans, trimmed and cut
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 2 cups chopped kale
  • 2 teaspoons dried thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add the onion, garlic, carrots, and celery. Sauté until softened.
  3. Add the chicken broth, diced tomatoes, and potatoes. Bring to a simmer.
  4. Add the green beans and cook until tender.
  5. Stir in the cannellini beans, kale, thyme, salt, and pepper.
  6. Crumble the turkey bacon and add it back to the pot. Cook for additional 5 minutes.
  7. Serve hot.

Notes

  • This minestrone is versatile; feel free to add any seasonal vegetables.
  • Leftover turkey or chicken can be used for added flavor.
