Instant Pot Olive Garden Minestrone Soup

This Instant Pot Olive Garden Minestrone Soup is the perfect comforting dish for any day of the week.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 zucchini, diced
  • 1 (14.5 ounce) can diced tomatoes
  • 4 cups vegetable broth
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1 (15 ounce) can cannellini beans, drained and rinsed
  • 1 cup pasta (small shapes like ditalini)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups spinach

Instructions

  1. Set the Instant Pot to sauté mode. Add olive oil, and sauté the onion, carrots, and celery until soft.
  2. Add garlic and zucchini, and cook for another minute.
  3. Stir in diced tomatoes, vegetable broth, kidney beans, cannellini beans, pasta, Italian seasoning, salt, and pepper.
  4. Seal the Instant Pot and cook on high pressure for 6 minutes.
  5. Once done, quick-release the pressure, and stir in the spinach until wilted.

Notes

  • This soup can be easily customized with your favorite vegetables.
  • For added flavor, consider adding a Parmesan rind during cooking.
