  • 4 cups beef broth
  • 1 cup white wine
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces fontina cheese, shredded

Instructions

  1. In a large pot, heat olive oil and butter over medium heat. Add the onions and cook until caramelized.
  2. Pour in the white wine and scrape up any browned bits from the bottom of the pot.
  3. Add the beef broth, thyme, salt, and pepper. Bring to a simmer.
  4. Reduce heat and let the soup simmer for 30 minutes.
  5. Preheat the oven broiler. Ladle the soup into oven-safe bowls, top with shredded fontina, and place under the broiler until the cheese is melted and bubbly.
