- 4 slices turkey bacon
- 1 medium onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 8 cups chicken broth
- 1 can diced tomatoes
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 2 cups spinach, chopped
- 1 cup small pasta
- Salt and pepper to taste
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- In the same pot, add onion, carrots, and celery. Cook until softened.
- Add garlic and cook for another minute.
- Pour in the chicken broth and diced tomatoes.
- Add basil, oregano, and bring to a boil.
- Add the pasta and spinach, and cook until the pasta is al dente.
- Season with salt and pepper. Serve hot.
Notes
- For extra flavor, add Parmesan cheese on top when serving.
