Italian Penicillin Soup

Ingredients

  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 1 can diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 cups spinach, chopped
  • 1 cup small pasta
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add onion, carrots, and celery. Cook until softened.
  3. Add garlic and cook for another minute.
  4. Pour in the chicken broth and diced tomatoes.
  5. Add basil, oregano, and bring to a boil.
  6. Add the pasta and spinach, and cook until the pasta is al dente.
  7. Season with salt and pepper. Serve hot.

Notes

  • For extra flavor, add Parmesan cheese on top when serving.
