Japanese Egg Sandwich (Tamago Sando)

A classic Japanese breakfast or snack, the Tamago Sando features fluffy egg salad sandwiched between soft bread.

Ingredients

  • 4 large eggs
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 slices soft white bread
  • 1 tablespoon chop green onions

Instructions

  1. Hard boil the eggs, then peel and chop them into small pieces.
  2. In a bowl, mix the chopped eggs with mayonnaise, Dijon mustard, salt, pepper, and green onions.
  3. Spread the egg mixture evenly on two slices of bread.
  4. Top with the remaining slices of bread and cut the sandwich into halves or quarters.

Notes

  • You can add a touch of wasabi for extra flavor.
  • Use soft bread for a more authentic texture.
