  • 1/2 cup cream cheese
  • 1/2 cup pumpkin puree
  • 1/3 cup erythritol
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large mixing bowl, combine almond flour, erythritol, and baking powder.
  3. In another bowl, mix cream cheese, pumpkin puree, eggs, vanilla extract, and pumpkin pie spice until smooth.
  4. Gradually mix the wet ingredients into the dry ingredients until fully combined.
  5. Pour the mixture into the prepared muffin tin, filling each liner about 2/3 full.
  6. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  7. Allow to cool before serving.
