Ingredients

  • 1 pound kielbasa, sliced
  • 4 cups potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups kale, chopped
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion and garlic until softened.
  2. Add the sliced kielbasa and cook until browned.
  3. Stir in the potatoes and chicken broth; bring to a boil.
  4. Reduce heat and simmer for 20 minutes, or until potatoes are tender.
  5. Stir in the cream, kale, and thyme; simmer for an additional 5 minutes.
  6. Season with salt and pepper to taste before serving.

Notes

  • This soup can be made ahead of time and reheated.
  • For a smokier flavor, use smoked kielbasa.
