Lemon Chicken Orzo Soup

A warm and nourishing soup made with chicken, orzo, and fresh lemon.

  • 1 lb boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 2 cups water
  • 1 lemon, juiced and zested
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp olive oil
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions, carrots, and celery; sauté until vegetables are tender.
  3. Add garlic and thyme; cook for an additional minute.
  4. Stir in chicken broth, water, and bring to a boil.
  5. Once boiling, add the chicken breasts and orzo.
  6. Cook for approximately 10-12 minutes, or until the chicken is cooked through and orzo is tender.
  7. Remove chicken, shred it, and return it to the pot.
  8. Add lemon juice, zest, salt, and pepper. Stir well.
  9. Garnish with fresh parsley before serving.

Notes

  • For an extra zing, add more lemon juice to taste.
  • This soup can be made ahead of time and stored for meals throughout the week.
