- 1 lb boneless, skinless chicken breasts
- 1 cup orzo pasta
- 4 cups chicken broth
- 2 cups water
- 1 lemon, juiced and zested
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp thyme
- 1 tsp salt
- 1/2 tsp pepper
- 2 tbsp olive oil
- 1/4 cup fresh parsley, chopped
- In a large pot, heat olive oil over medium heat.
- Add onions, carrots, and celery; sauté until vegetables are tender.
- Add garlic and thyme; cook for an additional minute.
- Stir in chicken broth, water, and bring to a boil.
- Once boiling, add the chicken breasts and orzo.
- Cook for approximately 10-12 minutes, or until the chicken is cooked through and orzo is tender.
- Remove chicken, shred it, and return it to the pot.
- Add lemon juice, zest, salt, and pepper. Stir well.
- Garnish with fresh parsley before serving.
Notes
- For an extra zing, add more lemon juice to taste.
- This soup can be made ahead of time and stored for meals throughout the week.
