  • 1 pound boneless, skinless chicken breasts
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, diced
  • 2 stalks celery, diced
  • 8 cups chicken broth
  • 1 cup orzo pasta
  • 2 cups spinach, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chicken breasts and cook until browned on both sides.
  3. Remove chicken and set aside; add onion, garlic, carrots, and celery to the pot.
  4. Sauté until vegetables are tender.
  5. Return chicken to the pot and add chicken broth.
  6. Bring to a boil, then simmer for 20 minutes.
  7. Add orzo and cook for an additional 10 minutes.
  8. Stir in spinach and lemon juice before serving.
