Lemon Chicken Orzo Soup

A warm and hearty lemon chicken orzo soup that is perfect for any occasion.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound chicken breast, diced
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup orzo pasta
  • 1 lemon, juiced and zested
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups spinach, chopped
  • 1/4 cup parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced chicken and cook until no longer pink.
  3. Add onion, carrots, and celery; sauté until softened.
  4. Stir in garlic and cook for another minute.
  5. Pour in chicken broth, and bring to a boil.
  6. Add orzo, lemon juice, thyme, salt, and pepper.
  7. Reduce heat and let simmer until orzo is cooked.
  8. Stir in spinach and parsley just before serving.

Notes

  • For a creamier soup, add a splash of cream before serving.
  • Use leftover rotisserie chicken for a quicker option.
