Lemon Cranberry Muffins

These Lemon Cranberry Muffins are the perfect blend of tart and sweet, making them an ideal treat for any occasion.

Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 1 cup fresh cranberries
  • 1 tablespoon lemon zest
  • ½ cup milk
  • ⅓ cup vegetable oil
  • 1 large egg

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Gently fold in the cranberries and lemon zest.
  4. In another bowl, combine the milk, vegetable oil, and egg.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Let cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

Notes

  • For a sweeter muffin, add more sugar to the batter.
  • Use frozen cranberries if fresh are not available.
