Lemon-Thyme Sorbet with Summer Berries

Ingredients

  • 2 cups water
  • 1 cup granulated sugar
  • 1/2 cup freshly squeezed lemon juice
  • 2 tablespoons fresh thyme leaves
  • 2 cups mixed summer berries (strawberries, blueberries, raspberries)

Instructions

  1. In a saucepan, combine the water and sugar. Heat over medium heat, stirring until the sugar dissolves. Remove from heat.
  2. Add the lemon juice and thyme leaves to the sugar syrup. Allow to cool completely.
  3. Strain the mixture to remove the thyme leaves.
  4. Churn the mixture in an ice cream maker according to the manufacturer’s instructions.
  5. Once churned, transfer to a container and freeze until firm.
  6. Serve the sorbet in bowls topped with fresh summer berries.

Notes

  • For an extra lemony flavor, add lemon zest to the mixture before churning.
  • Feel free to adjust the sweetness by adding more or less sugar based on personal preference.
