- 2 cups skim milk
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1 tablespoon vanilla extract
- 4 large egg yolks
- 2 tablespoons brown sugar
- Preheat the oven to 325°F (160°C).
- In a saucepan, combine skim milk, heavy cream, and granulated sugar. Heat over medium heat until hot but not boiling.
- In a bowl, whisk together the egg yolks and vanilla extract until smooth.
- Slowly whisk the hot milk mixture into the egg yolks, being careful not to cook the eggs.
- Pour the mixture into ramekins and place them in a baking dish filled with hot water halfway up the sides of the ramekins.
- Bake for about 30-35 minutes or until set.
- Remove from the oven and cool completely in the refrigerator.
- Before serving, sprinkle brown sugar on top of each ramekin and use a kitchen torch to caramelize the sugar until golden brown.
Notes
- This dessert can be made a day in advance.
- Make sure to chill the crème brûlée before caramelizing the top for the best texture.
