Lighter Crème Brûlee

A delightful, lightened version of the classic dessert that satisfies your sweet tooth without the guilt.

Ingredients

  • 2 cups skim milk
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 4 large egg yolks
  • 2 tablespoons brown sugar

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a saucepan, combine skim milk, heavy cream, and granulated sugar. Heat over medium heat until hot but not boiling.
  3. In a bowl, whisk together the egg yolks and vanilla extract until smooth.
  4. Slowly whisk the hot milk mixture into the egg yolks, being careful not to cook the eggs.
  5. Pour the mixture into ramekins and place them in a baking dish filled with hot water halfway up the sides of the ramekins.
  6. Bake for about 30-35 minutes or until set.
  7. Remove from the oven and cool completely in the refrigerator.
  8. Before serving, sprinkle brown sugar on top of each ramekin and use a kitchen torch to caramelize the sugar until golden brown.

Notes

  • This dessert can be made a day in advance.
  • Make sure to chill the crème brûlée before caramelizing the top for the best texture.
