Mango Sticky Rice

  • 1 cup glutinous rice
  • 1 1/2 cups coconut milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 2 ripe mangoes, peeled and sliced

Instructions

  1. Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 1 hour.
  2. Drain the rice and steam it in a steamer lined with cheesecloth for about 25-30 minutes.
  3. In a saucepan, combine coconut milk, sugar, and salt over medium heat until the sugar dissolves.
  4. Once the rice is cooked, transfer it to a bowl and mix in 1 cup of the coconut mixture. Allow it to sit for 30 minutes.
  5. To serve, place a portion of the sticky rice on a plate, top with sliced mango, and drizzle with the remaining coconut sauce.
