Ingredients

  • 2 cups cherry tomatoes
  • 1 large zucchini
  • 1 large bell pepper
  • 1 medium red onion
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup feta cheese (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Chop the vegetables into bite-sized pieces.
  3. In a bowl, toss the vegetables with olive oil, oregano, garlic powder, salt, and pepper.
  4. Spread the vegetables on a baking sheet.
  5. Roast for 20-25 minutes or until tender and slightly caramelized.
