Mexican Street Corn Pasta Salad

An easy and delicious take on traditional Mexican street corn, now in pasta form with the added flavor of turkey bacon.

Ingredients

  • 8 ounces pasta
  • 4 slices turkey bacon
  • 1 cup corn, roasted
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package directions and drain.
  2. In a skillet, cook the turkey bacon until crispy, then chop into pieces.
  3. In a large bowl, combine the cooked pasta, turkey bacon, corn, cherry tomatoes, red onion, and cilantro.
  4. In a separate bowl, whisk together the mayonnaise, lime juice, chili powder, salt, and pepper.
  5. Pour the dressing over the pasta salad and toss until well combined.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • This salad is best served chilled.
  • Feel free to add more veggies or adjust the seasonings to your taste.
