Mexican Street Corn Pasta Salad

A delicious and vibrant Mexican Street Corn Pasta Salad with savory turkey bacon and chicken ham.

Ingredients

  • 8 ounces elbow macaroni
  • 4 slices turkey bacon
  • 1 cup cooked chicken ham, diced
  • 1 cup corn, fresh or frozen
  • 1/2 cup red onion, diced
  • 1/2 cup cilantro, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the macaroni according to package instructions; drain and cool.
  2. In a skillet, cook turkey bacon until crispy; crumble and set aside.
  3. In a large bowl, combine macaroni, turkey bacon, chicken ham, corn, red onion, and cilantro.
  4. In a separate bowl, mix mayonnaise, lime juice, chili powder, salt, and pepper.
  5. Combine the dressing with the pasta salad and mix well.
  6. Chill for at least 30 minutes before serving.

Notes

  • For extra flavor, add some diced jalapeños.
  • Substitute Greek yogurt for mayonnaise for a lighter version.
