Mexican Street Corn Pasta Salad

A vibrant and refreshing pasta salad inspired by the classic Mexican street corn dish, perfect for summer gatherings.

Ingredients

  • 12 ounces pasta of your choice
  • 2 cups corn kernels, fresh or frozen
  • 1 lime, juiced
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1 cup cotija cheese, crumbled
  • 1/4 cup fresh cilantro, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside to cool.
  2. In a large bowl, combine corn, lime juice, mayonnaise, sour cream, chili powder, garlic powder, and mix well.
  3. Add the cooled pasta to the corn mixture and stir to combine.
  4. Fold in cotija cheese and cilantro, then season with salt and black pepper to taste.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For a spicier version, add diced jalapeños.
  • Can substitute mayo with Greek yogurt for a healthier option.
