  • 4 slices prosciutto
  • 1 package puff pastry
  • 1 egg, beaten

  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the beef tenderloin with salt and pepper, then sear it in olive oil over high heat until browned.
  3. In the same pan, sauté the chopped mushrooms until all moisture evaporates.
  4. Lay prosciutto on a sheet of plastic wrap, overlapping slightly. Spread the mushroom mixture over the prosciutto, then place the beef on top.
  5. Roll tightly using the plastic wrap and chill for 30 minutes.
  6. Roll out the puff pastry and unwrap the beef. Place the beef in the center and wrap it in pastry, sealing edges.
  7. Brush with beaten egg and cut slits for steam to escape.
  8. Bake for 25-30 minutes until golden brown.
