- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 1 zucchini, chopped
- 1 bell pepper, chopped
- 1 can chickpeas, drained
- 2 cups vegetable broth
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon paprika
- 1 teaspoon cinnamon
- salt to taste
- pepper to taste
- 1 cup dried apricots, chopped
- 1/4 cup almonds, toasted
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté until translucent.
- Stir in the carrots, zucchini, and bell pepper, cooking for about 5 minutes.
- Add the chickpeas, vegetable broth, and spices. Bring to a boil.
- Reduce the heat and let it simmer for 20 minutes.
- In the last 5 minutes, add the dried apricots and almonds.
- Season with salt and pepper to taste before serving.
