Moroccan Inspired Vegetable Tagine

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 1 zucchini, chopped
  • 1 bell pepper, chopped
  • 1 can chickpeas, drained
  • 2 cups vegetable broth
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon cinnamon
  • salt to taste
  • pepper to taste
  • 1 cup dried apricots, chopped
  • 1/4 cup almonds, toasted

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in the carrots, zucchini, and bell pepper, cooking for about 5 minutes.
  4. Add the chickpeas, vegetable broth, and spices. Bring to a boil.
  5. Reduce the heat and let it simmer for 20 minutes.
  6. In the last 5 minutes, add the dried apricots and almonds.
  7. Season with salt and pepper to taste before serving.
