Mudslide Cupcakes with Baileys Frosting

  • 1/2 cup unsweetened cocoa powder

  • 1/4 teaspoon baking powder

  • 1/2 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup brewed coffee
  • 1/4 cup Baileys Irish Cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, cocoa powder, sugar, baking soda, baking powder, and salt.
  3. In another bowl, combine the buttermilk, vegetable oil, eggs, and vanilla extract, then mix well.
  4. Gradually add the wet ingredients to the dry ingredients and mix until just combined.
  5. Stir in the brewed coffee and Baileys Irish Cream until smooth.
  6. Fill each cupcake liner about 2/3 full with batter.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cupcakes cool completely before frosting.

Notes

  • For a richer flavor, you can add more cocoa powder.
  • Store leftover cupcakes in an airtight container at room temperature for up to 3 days.
