Navy Bean Soup

A hearty navy bean soup enhanced with savory turkey bacon for a comforting meal.

Ingredients

  • 1 cup navy beans, dried
  • 4 slices turkey bacon
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 2 garlic cloves, minced
  • 1 tsp thyme, dried
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Rinse and soak the navy beans overnight.
  2. In a large pot, cook turkey bacon until crispy. Remove and crumble.
  3. In the same pot, sauté onion, carrots, and celery until tender.
  4. Add minced garlic and sauté for another minute.
  5. Add soaked beans, chicken broth, thyme, bay leaf, and crumbled bacon.
  6. Bring to a boil, then reduce heat and simmer for about 1 hour or until beans are tender.
  7. Season with salt and pepper to taste.

Notes

  • For a thicker soup, blend a portion of the beans and return to the pot.
  • This soup is even better the next day as flavors develop.
