- 1 cup rolled oats
- 1 cup whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup honey or maple syrup
- 1/2 cup unsweetened applesauce
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup raisins
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix the oats, flour, baking powder, baking soda, salt, and cinnamon.
- In another bowl, whisk together the honey, applesauce, eggs, and vanilla.
- Combine the wet ingredients with the dry ingredients and stir until just mixed. Fold in the raisins.
- Fill the muffin cups about 2/3 full with the batter.
- Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
