  • 1 cup whole wheat flour

  • 1/2 cup honey or maple syrup
  • 1/2 cup unsweetened applesauce
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the oats, flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together the honey, applesauce, eggs, and vanilla.
  4. Combine the wet ingredients with the dry ingredients and stir until just mixed. Fold in the raisins.
  5. Fill the muffin cups about 2/3 full with the batter.
  6. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  7. Allow to cool before serving.
