Olive Garden Chicken Gnocchi Soup

A comforting, homemade version of the beloved Olive Garden Chicken Gnocchi Soup.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 package (16 oz) gnocchi
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté onion, garlic, carrots, and celery until tender.
  2. Add the chicken broth and bring to a boil.
  3. Stir in the shredded chicken and gnocchi; cook until gnocchi float to the top.
  4. Add the heavy cream, spinach, thyme, salt, and pepper; simmer for a few minutes until heated through.
  5. Serve hot and enjoy!
