- 8 ounces rice noodles
- 4 slices turkey bacon
- 1 cup chicken ham, diced
- 2 eggs
- 1 cup bean sprouts
- 2 green onions, chopped
- 3 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- 1 tablespoon sugar
- 1/4 cup crushed peanuts
- Cook rice noodles according to package instructions.
- In a pan, cook turkey bacon until crispy, then remove and chop.
- In the same pan, add chicken ham and sauté.
- Push to one side, scramble eggs on the other side.
- Add cooked noodles, bean sprouts, green onions, soy sauce, fish sauce, lime juice, and sugar.
- Toss everything together and cook for another 2 minutes.
- Serve topped with crushed peanuts.
