  • 8 ounces rice noodles
  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 2 eggs
  • 1 cup bean sprouts
  • 2 green onions, chopped
  • 3 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 tablespoon sugar
  • 1/4 cup crushed peanuts

Instructions

  1. Cook rice noodles according to package instructions.
  2. In a pan, cook turkey bacon until crispy, then remove and chop.
  3. In the same pan, add chicken ham and sauté.
  4. Push to one side, scramble eggs on the other side.
  5. Add cooked noodles, bean sprouts, green onions, soy sauce, fish sauce, lime juice, and sugar.
  6. Toss everything together and cook for another 2 minutes.
  7. Serve topped with crushed peanuts.

Notes

  • For a vegetarian option, substitute turkey bacon with tofu.
  • Adjust the sauce ingredients to taste.
