- 2 cups mascarpone cheese
- 1 cup heavy cream
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup brewed coffee, cooled
- 1 cup pistachio nuts, crushed
- 24 ladyfinger cookies
- 2 tablespoons cocoa powder
- In a mixing bowl, beat the heavy cream and powdered sugar until stiff peaks form.
- In another bowl, mix the mascarpone cheese and vanilla extract until smooth.
- Fold the whipped cream into the mascarpone mixture gently.
- Dip each ladyfinger in the cooled coffee for about a second and layer them in a dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Sprinkle half of the crushed pistachios over the mascarpone layer.
- Repeat the layering process with the remaining ladyfingers, mascarpone mixture, and crushed pistachios.
- Refrigerate for at least 4 hours or overnight for best flavor.
- Before serving, dust the top with cocoa powder.
Notes
- For a richer flavor, add a splash of coffee liqueur to the coffee.
- Make sure the ladyfingers are not soaked for too long to prevent them from falling apart.
