  • 8 oz cream cheese, softened
  • 2 cups graham cracker crumbs
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1 cup chocolate chips
  • 2 tbsp coconut oil

Instructions

  1. In a large bowl, combine pumpkin puree, cream cheese, graham cracker crumbs, powdered sugar, vanilla extract, and pumpkin pie spice until smooth.
  2. Roll the mixture into small balls and place on a baking sheet lined with parchment paper.
  3. Chill in the refrigerator for 30 minutes.
  4. In a microwave-safe bowl, melt chocolate chips and coconut oil together until smooth.
  5. Dip each truffle into the melted chocolate and return to the parchment-lined baking sheet.
  6. Let the chocolate set in the refrigerator for about 15 minutes before serving.

Notes
