  • 1/2 cup cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix pumpkin puree, cream cheese, granulated sugar, brown sugar, eggs, and vegetable oil until smooth.
  3. In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. Fill each muffin cup about 2/3 full with the batter.
  6. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool for a few minutes before transferring to a wire rack.

Notes

  • For an extra touch, add chocolate chips or nuts to the batter.
