  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the pumpkin puree, vegetable oil, and sugar.
  3. Add the eggs and mix well.
  4. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients until just combined.
  6. Pour the batter into a greased muffin tin and fill each cup 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let cool before serving.
