- 2 cups cooked shredded chicken
- 1 can green chile enchilada sauce
- 1 cup shredded cheese
- 8 tortillas
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix the chicken, black beans, corn, cumin, and garlic powder.
- Spread a layer of enchilada sauce in the bottom of a baking dish.
- Layer half of the tortillas on top of the sauce.
- Add half of the chicken mixture, followed by half of the cheese.
- Repeat the layers, finishing with tortillas and remaining enchilada sauce on top.
- Sprinkle with the remaining cheese.
- Bake for 25-30 minutes or until bubbling and golden.
Notes
- Serve with sour cream and fresh cilantro.
- Can be made ahead and stored in the refrigerator.
