Quick and Easy Green Chile Chicken Enchilada Casserole

A delicious and quick recipe for green chile chicken enchilada casserole that the whole family will love.

Ingredients

  • 2 cups cooked shredded chicken
  • 1 can green chile enchilada sauce
  • 1 cup shredded cheese
  • 8 tortillas
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the chicken, black beans, corn, cumin, and garlic powder.
  3. Spread a layer of enchilada sauce in the bottom of a baking dish.
  4. Layer half of the tortillas on top of the sauce.
  5. Add half of the chicken mixture, followed by half of the cheese.
  6. Repeat the layers, finishing with tortillas and remaining enchilada sauce on top.
  7. Sprinkle with the remaining cheese.
  8. Bake for 25-30 minutes or until bubbling and golden.

Notes

  • Serve with sour cream and fresh cilantro.
  • Can be made ahead and stored in the refrigerator.
