Roasted Tomato Gnocchi Soup

A hearty and comforting soup made with roasted tomatoes and fluffy gnocchi.

Ingredients

  • 2 cups roasted tomatoes
  • 1 package gnocchi
  • 4 cups vegetable broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup heavy cream
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss tomatoes with olive oil, salt, and pepper, and roast for 25-30 minutes.
  3. In a large pot, sauté onion and garlic until translucent.
  4. Add roasted tomatoes, vegetable broth, and basil; simmer for 10 minutes.
  5. Stir in gnocchi and cook until they float to the top.
  6. Add heavy cream and mix well.
  7. Garnish with parsley before serving.

Notes

  • For a vegan version, replace heavy cream with coconut milk.
  • This soup can be made ahead of time and reheated.
