- 1 pound red beans
- 1 cup long-grain rice
- 4 slices turkey bacon, chopped
- 1 onion, diced
- 2 celery stalks, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 teaspoons Cajun seasoning
- 1 teaspoon thyme
- 1/2 teaspoon black pepper
- 2 bay leaves
- In a slow cooker, add the red beans, turkey bacon, onion, celery, bell pepper, and garlic.
- Pour in the chicken broth and season with Cajun seasoning, thyme, black pepper, and bay leaves.
- Cover and cook on low for 8 hours or until the beans are tender.
- About 30 minutes before serving, stir in the rice and cook until done.
- Remove bay leaves before serving.
