Slow Cooker Cajun Red Beans and Rice

A flavorful and hearty dish made with red beans, rice, and turkey bacon, perfect for a comforting meal.

  • 1 pound red beans
  • 1 cup long-grain rice
  • 4 slices turkey bacon, chopped
  • 1 onion, diced
  • 2 celery stalks, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon thyme
  • 1/2 teaspoon black pepper
  • 2 bay leaves

Instructions

  1. In a slow cooker, add the red beans, turkey bacon, onion, celery, bell pepper, and garlic.
  2. Pour in the chicken broth and season with Cajun seasoning, thyme, black pepper, and bay leaves.
  3. Cover and cook on low for 8 hours or until the beans are tender.
  4. About 30 minutes before serving, stir in the rice and cook until done.
  5. Remove bay leaves before serving.
