Slow Cooker Lemon Herb Chicken and Rice

A delightful slow cooker recipe featuring tender chicken with a zesty lemon herb flavor, served over a bed of fluffy rice.

  • 4 chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 lemon, juiced and zested
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a slow cooker, combine the chicken broth, lemon juice, lemon zest, olive oil, thyme, oregano, garlic, salt, and pepper.
  2. Place the chicken breasts in the slow cooker and make sure they are well coated.
  3. Add the rice on top of the chicken, spreading it out evenly.
  4. Cover and cook on low for 6-8 hours, or until the chicken is cooked through and the rice is tender.
  5. Remove the chicken, shred it with two forks, and stir it back into the rice before serving.
