  • 2 pounds baby red potatoes
  • 4 slices turkey bacon
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh chives, chopped

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Boil the baby red potatoes in a large pot of salted water until tender, about 15-20 minutes.
  3. Drain the potatoes and transfer them to a baking sheet.
  4. Using a fork or potato masher, smash each potato to about 1/2 inch thick.
  5. Crisp the turkey bacon in a skillet, then chop it into small pieces.
  6. Drizzle the smashed potatoes with olive oil, and sprinkle with garlic powder, salt, and pepper.
  7. Top with chopped turkey bacon and bake for an additional 15-20 minutes until crispy.
  8. Garnish with fresh chives before serving.

Notes
