Southwest Crock Pot Chicken and Rice

  • 1 pound boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 1 can (15 oz) black beans, drained
  • 1 can (15 oz) corn, drained
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 1 packet taco seasoning
  • 3 cups low-sodium chicken broth
  • 1 cup shredded cheese, optional

Instructions

  1. Place chicken breasts in the bottom of the slow cooker.
  2. Layer the rice, black beans, corn, bell pepper, and onion on top of the chicken.
  3. Sprinkle the taco seasoning over the top, then pour the chicken broth over all ingredients.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is cooked through.
  5. Before serving, shred the chicken with two forks and mix everything together. Top with shredded cheese if desired.

Notes

  • For best results, use low-sodium chicken broth.
  • Adjust the spice level by using a mild or hot taco seasoning.
