Spaghetti & Spinach with Sun-Dried Tomato Cream Sauce

Delicious spaghetti tossed with fresh spinach and a creamy sauce made from sun-dried tomatoes.

Ingredients

  • 8 ounces spaghetti
  • 2 cups fresh spinach
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh basil, chopped

Instructions

  1. Cook spaghetti according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add sun-dried tomatoes and spinach, cooking until spinach is wilted.
  4. Stir in the heavy cream, salt, and pepper; bring to a simmer.
  5. Add cooked spaghetti to the skillet and toss to coat with the sauce.
  6. Remove from heat, stir in Parmesan cheese and basil before serving.

Notes

  • For a healthier option, use whole wheat spaghetti.
  • Add grilled chicken for extra protein.
