Spanish Rice and Beans

A flavorful and hearty dish that combines rice, beans, and the savory taste of turkey bacon.

  • 1 cup long-grain rice
  • 2 cups vegetable broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 4 slices turkey bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large skillet, cook turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same skillet, add onion and garlic; sauté until softened.
  3. Add rice to the skillet and toast for a couple of minutes.
  4. Pour in vegetable broth and bring to a boil.
  5. Stir in black beans, cumin, paprika, and salt.
  6. Reduce heat, cover, and simmer until rice is cooked through.
  7. Remove from heat and stir in crispy turkey bacon and cilantro.

Notes

  • This dish can be customized by adding vegetables such as bell peppers or corn.
