Spicy Jalapeño Popper Chicken Soup

A creamy and spicy chicken soup that combines the flavors of jalapeño poppers with turkey bacon.

Ingredients

  • 1 pound chicken breast
  • 4 slices turkey bacon
  • 1 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 2 jalapeños, diced
  • 4 cups chicken broth
  • 1 cup corn, canned or frozen
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon cumin

Instructions

  1. Cook the turkey bacon in a large pot until crispy. Remove and chop into pieces.
  2. In the same pot, sauté the onion and garlic until soft.
  3. Add the diced jalapeños and cook for a few minutes.
  4. Stir in the chicken breast, chicken broth, and corn. Bring to a simmer.
  5. Cook until the chicken is fully cooked, then shred it into the soup.
  6. Mix in the cream cheese and cheddar cheese until melted.
  7. Add the chopped bacon back into the soup and season with cumin.
  8. Let simmer for 5 more minutes before serving.

Notes

  • For a spicier soup, leave the seeds in the jalapeños.
  • Can substitute chicken with shredded rotisserie chicken for quicker prep.
