Spinach and Cream Cheese Stuffed Chicken

A delicious and indulgent dish that combines spinach and cream cheese stuffed into tender chicken breasts.

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 8 oz cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine chopped spinach, cream cheese, mozzarella, Parmesan, garlic, Italian seasoning, salt, and pepper.
  3. Cut a pocket in each chicken breast and fill with the spinach and cream cheese mixture.
  4. Heat olive oil in a skillet over medium-high heat. Sear the stuffed chicken breasts for about 3-4 minutes per side.
  5. Transfer the chicken to a baking dish and bake for 20-25 minutes, or until cooked through.
  6. Let rest for a few minutes before serving.
