  • 1 large egg

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the flours, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the yogurt, oil, egg, and vanilla extract.
  4. Combine the wet and dry ingredients until just mixed.
  5. Fold in the chopped strawberries gently.
  6. Fill each muffin cup about 2/3 full with batter.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Allow to cool for a few minutes before transferring to a wire rack.
