Super Easy Chicken and Dumplings

  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup frozen peas and carrots
  • 2 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon butter
  • 3/4 cup milk

Instructions

  1. In a large pot, combine the chicken and chicken broth. Bring to a boil and then simmer for 20 minutes.
  2. Remove the chicken, shred it, and return it to the pot along with the peas and carrots.
  3. In a bowl, mix the flour, baking powder, and salt. Cut in the butter and then stir in the milk until just combined.
  4. Drop spoonfuls of the dumpling mixture into the simmering broth.
  5. Cover and cook for 10-12 minutes. Serve hot.

Notes

  • For added flavor, season the chicken with herbs before boiling.
  • Leftover chicken can be used for this recipe.
