Swedish Pancakes

Delicious and fluffy Swedish pancakes served with crispy turkey bacon and chicken ham for a delightful breakfast.

  • 1 cup all-purpose flour
  • 2 cups milk
  • 2 eggs
  • 1 tablespoon sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 4 tablespoons butter, melted
  • 6 slices turkey bacon
  • 6 slices chicken ham

Instructions

  1. In a mixing bowl, whisk together the flour, milk, eggs, sugar, vanilla extract, and salt until smooth.
  2. Heat a non-stick skillet over medium heat and add a little melted butter.
  3. Pour a small amount of batter into the skillet, spreading it evenly.
  4. Cook for 1-2 minutes until the edges begin to set, then flip and cook for another minute.
  5. Repeat with remaining batter.
  6. In a separate skillet, cook the turkey bacon and chicken ham until crispy.
  7. Serve the pancakes warm topped with bacon and ham.

Notes

  • For a sweeter pancake, add a bit more sugar to the batter.
  • These pancakes pair well with fresh fruit and syrup.
