Tomato Gnocchi Soup Recipe

  • 6 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 pound gnocchi
  • 2 cups fresh spinach
  • ½ cup grated Parmesan cheese

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add olive oil, onion, and garlic to the pot, and sauté until the onion is translucent.
  3. Pour in the vegetable broth and diced tomatoes, then add the basil and oregano.
  4. Bring the soup to a boil, then reduce to a simmer and add the gnocchi.
  5. Cook for about 3-5 minutes until the gnocchi float to the top.
  6. Add the spinach and cook until wilted.
  7. Serve hot, topped with crumbled turkey bacon and grated Parmesan cheese.

Notes

  • For a vegetarian option, omit the turkey bacon.
