- 4 pounds beef short ribs
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 4 sprigs fresh thyme
- 2 bay leaves
- Preheat the oven to 350°F.
- Season short ribs with salt and pepper.
- In a large Dutch oven, heat olive oil over medium-high heat. Brown the ribs on all sides.
- Remove ribs and add onions, carrots, and celery. Cook until softened.
- Add garlic and cook for another minute.
- Stir in beef broth, wine, and tomato paste. Bring to a simmer.
- Add short ribs back to the pot, along with thyme and bay leaves.
- Cover and transfer to the oven. Cook for about 3 hours until tender.
