Unbelievably Soft and Chewy Gingerbread Man Cookies (No Spread!)

These gingerbread man cookies are the perfect blend of soft and chewy, with no spreading during baking!

Ingredients

  • 3 cups all-purpose flour
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup molasses
  • 1 large egg

Instructions

  1. In a bowl, whisk together flour, ginger, cinnamon, baking soda, and salt.
  2. In a separate bowl, cream the butter and brown sugar until light and fluffy.
  3. Add the molasses and egg to the butter mixture and mix well.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  5. Chill the dough for at least 2 hours.
  6. Preheat the oven to 350°F (175°C).
  7. Roll out the dough and cut into shapes.
  8. Bake for 8-10 minutes or until edges are firm.
  9. Let cool before decorating.

Notes

  • For extra flavor, add chopped crystallized ginger to the dough.
  • These cookies can be decorated with royal icing or left as is.
