White Chicken Chili

A delicious and hearty white chicken chili recipe with a unique turkey bacon twist.

  • 1 pound boneless, skinless chicken breasts
  • 4 slices turkey bacon
  • 1 can white beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 4 cups chicken broth
  • 1 cup sour cream
  • 1 cup shredded cheese
  • salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add chopped onion and garlic, sauté until translucent.
  3. Add the chicken breasts, seasonings, and chicken broth. Bring to a boil.
  4. Reduce heat and let simmer until chicken is cooked through.
  5. Remove chicken, shred it, and return to the pot.
  6. Add the white beans, corn, sour cream, and cheese. Stir until well combined and heated through.
  7. Serve hot, garnished with crispy turkey bacon.

Notes

  • For a spicier kick, add diced green chilies.
  • This chili can be made a day in advance for better flavor.
