- 1 pound boneless, skinless chicken breasts
- 4 slices turkey bacon
- 1 can white beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 4 cups chicken broth
- 1 cup sour cream
- 1 cup shredded cheese
- salt and pepper to taste
- In a large pot, cook the turkey bacon until crispy. Remove and set aside.
- In the same pot, add chopped onion and garlic, sauté until translucent.
- Add the chicken breasts, seasonings, and chicken broth. Bring to a boil.
- Reduce heat and let simmer until chicken is cooked through.
- Remove chicken, shred it, and return to the pot.
- Add the white beans, corn, sour cream, and cheese. Stir until well combined and heated through.
- Serve hot, garnished with crispy turkey bacon.
Notes
- For a spicier kick, add diced green chilies.
- This chili can be made a day in advance for better flavor.
